Pork and Chicken Rub

The Aji Lemon Yellow Pepper is amazing with Pork or Chicken. When we blend this citrusy, balanced heated pepper with our Cherry Smoked Pepper Mix, our dehydrated Yellow Bell peppers and Other spices – the flavors bring out the best in these meats.
We have used this rub on pork ribs, chops and butts. We usually lightly smoke our pork with a pecan/cherry wood blend. Often we will finish the pork dish with any one of our ‘Cherry, Chocolate Habanero Pepper Jams.’
This rub is excellent on Chicken. Just the perfect heat and spices that give a South American flare to your grilling, soup or stir fry. We take the skin off of our chicken and liberally coat the meat. On the grill, we smoke the chicken with a pecan/apple blend or for that southern flavor we will use mesquite at the finish. These dishes are great topped with any one of our ‘Peach-Mango Pepper Jams.’
